Hey guys. Probably a stupid question, but I'll ask anyway. What temp should I ferment this strain at? White labs site says 85+ is optimum. That just seems too high. Also, don't most of the barnyard qualities develop in that higher range? I'm looking for milder Brett character. FWIW, I'm brewing a 100% Brett IPA. Thanks.
 
After much reading on here, I see that fermenting with 100% brett is not as simple as whipping up a 2 liter starter and putting It on the stir plate for 24 hours like I normally do. Apparently white labs suggests 5 vials pitched into 5 gallons or a starter with numerous steps over a 10 day period. I don't want to spend the money to buy all those vials and I don't have the time for the 10 day starter. Since I already bought a vial of 645 I plan on using it. I'm thinking either ferment normally through primary and pitch the Brett in secondary. Or blend the 645 with 001 in a 2 liter starter. The target is 1.080. I've never blended yeasts before so I'm a little wary of that. Any advice?
