I brewed a Wit on Saturday afternoon and didn't see any signs of life through the weekend (using a Tilt and it stayed dead on @ 1.042, with last checking Sunday night before bed). Temp was at 68* and planning to slowly raise to ~74*.

Woke up this morning to check on the beer, thinking if I didn't see signs of life I would either dump or re-pitch. SG was @ 1.032 and here is what I saw.

Funky looking, if you ask me!

Looks fine. With lots of glutinous wheat you may get some large bubble krausen like that. If it was funky it usually looks much less active with the film/gooey bubble pretty flatly close to the surface of the beer.

Sorry, I wasn't using "funky" as infected. Its just crazy looking compared to other krausen I've had. I should have realized that "funk" has a specific meaning!
 
I found WLP400 to be a slow worker. I did a 1.045 wit that still wasn't at FG after 15 days. Beer tasted great, though.
