So I am almost 48 hours into fermenting a NE IPA and this being my first time using this yeast so just checking to see if my temps are right.

64 first 24hrs
67 24-48 hrs
70 48 until finished

I am thinking of maybe 72 the last day or two before I cold crash or is 70 a good temp to finish this yeast with?

Thanks!

Sounds fine to me! I use this yeast regularly in an English IPA with a similar schedule. 70* should be enough to finish it out though before cold crashing.

007 is probably my favorite yeast! I'll typically chill to 64 or 65, and set the temp to 19C for a day, 20C for a day then 21C for the remainder, dry hopping at around day 4, with another dry hop in the keg. So in F that's 66.2, 68 then 69.8. So your numbers are right in line with what I've been using with excellent results.

Looks perfect to me. Some would keep the ambient temp no higher than 68° but I bottled a brown ale after 4 wks, the last 2.5 at 70°. The 007 dropped the FG to 1.006 and I got 7.7% abv! No off flavors I could detect but will try a sample tonight to reevaluate.

I used a similar temp schedule as the OP and my NE IPA went from 1.068 to 1.010 in 6 days (and it probably finished up at least a day earlier). If you are adding hops during fermentation like you typically do for a NEIPA, you need to get them in there on day 3. I added mine on day 4 and I didn't feel like I got enough from it.

Yeah man this yeast is very quick. Hit FG just under 4 days added dry hops and needs some time to clean up the beer so I'll check again Xmas Eve.

I also do 64-65 for 4 days or so then jump up to 68 to dry hop (if doing an IPA or pale) then cold crash before kegging. 007 works great at these temps but I've also used it at 68 and not noticed very much difference at all.
It always attenuates well for me and is very fast.

I'm using this for an Pale Commonwealth Beer (12B) and fermenting at 68 for 4 days then Friday I'll turn it up to 70 and check gravity after Christmas. This will be the first time I've increased temps with 007 and I need it to clean itself up so I'm interested to see how it comes out.
