Hi All,

Looking for some suggestions... I was able to harvest wild yeast this summer from my yard. It turned out exceptionally well! I've now brewed 3 batches (10 gal total) and all are tasting great. It tastes very "wit-like" to me.

I'm looking for some suggestions of beer styles I can use this in.

My first batch was a fairly vanilla SMaSH beer to try to find out what this tasted like (all 2 row and hallertau + this yeast). My second batch was the Wit from Brewing Classic Styles - turned out amazing! Finished at 1.008. The 3rd is a standard American Wheat beer that I added blueberries to.

I like to change things up, so I don't want to just brew Wits all year long. I'm considering a Dunkel? Maybe a Tripel? I might try to brew at colder temps with this to see how that turns out? Any suggestions?
