I pieced together a wit recipe based largely on things I had read on other threads. I got my ingredients at the LHBS and the guy was a bit surprised... and that got me thinking...

I was planning on using (for a 2.5 gal batch)

1.4# Pale DME
1.1# Wheat DME

I'm aiming for about a 55/45 Barley/Wheat ratio, but now I'm wondering if the wheat DME isn't already 55/45 and if I shouldn't just use 2.5# of Wheat DME and no other fermentables...
 
It depends on the brand but I'm pretty sure most Wheat DME is 60/40 so you wouldn't really need to worry about that.

What about some steeping grains though?
 
In the past I've always steeped grains of one type or another, but I haven't found a Wit recipe with steeped grains... if you have one I'd love to see it!
 
It is really hard to make and all extract Wit. If you think that a mini-mash is not for you, then try adding a small (50 grams) amount of maltodextrin at the very end of your boil. I've never tried it, but some advocate using wheat flour in this way. I guess it works for bread.
