If anyone could help me here it would be greatly appreciated! I've scoured the internet and read countless articles but nothing has matched up to my scenario. I'm trying to convert a stand up freezer into a beer fridge/kegerator using the TSX3-520132. I would like to maintain the defrost function as my last fridge iced up frequently. Here's what I'm working with. Thanks in advance!

Generally, simply unplug the freezer line cord from a wall outlet, plug it into an outlet you've wired to any external controller (eg: stc1000 or Inkbird itc-308), place that controller's temperature sensor inside the cabinet, set the freezer to its coldest setting, and set the external controller for the desired temperature.

That same configuration should work for you. Typically there is a time delay switch (often a "thermo time" switch) associated with defrost circuits that will kick in - I see this with my brewery fridges - and when said switch times out the defrost will happen...

Cheers!

I really need help with the wiring part. If anyone has a schematic drawn up for how they integrated this controller that would be great.
Well I will take a stab. PLEASE TEST ON A BENCH WITH A METER FIRST…

Basically connect the PWR to a 110V power cord and plug in a wall outlet
Connect your temp probe to one of the probe inputs
Connect a 110V socket to one of the out ports, I would use out1.
Plug your freezer into the above outlet.
You should not need to do anything to the freezer except set it for its’ lowest temp.

Being lazy I would grab a heavy duty, min 14ga with ground, extension cord cut it in half and use it for the power connections.

Sounds as if you want to use the TSX3 in place of the freezer controller. This will require significant wiring changes from the freezer junction

to the TSX3 controller.
Slightly different controller, but did you see this discussion? https://www.homebrewtalk.com/threads/wiring-and-programming-tsx3.255000/

You will need to make sure the TSX3 parameters are set to support your setup.

I can't make a drawing but here are the wiring pin connections from TSX3 to Freezer harness.
Probe input for temp (assuming freezer thermistor is compatible)
pin 1 -> std1 (3)
pin 2 -> 4 May need different temp sensor as this may need to be unpowered input
pin 7 -> 5 Senses door open when door switch is closed

Power neutral pin 8 -> 6
Power Line pin 2 -> 7 and 9
pin 3 -> 8 Compressor and fan
pin 4 -> 10 Defrost (You will need to program the behavior you want)
pin 5 -> 11 Light (program this relay for light)

TSX3 Power 6 and 7 may need swapped since I don't have enough information on the wiring.
This would be a major project to do and @day_trippr has the more common simple answer above.

You could also follow the other link I referred to above and use out1 (8) on your controller and 6,7, and 9 along with the temp input which will follow their drawing.
