I began cold crashing 2 beers today (01/01/13), one is a Belgian Triple brewed 12/1/12 (OG 1.086) the other is a Pilsner brewed 12/12/12 (OG 1.043) If I rack them both into kegs tomorrow (01/02/13) will they be ready to drink Monday (01/07/13) that's only 5 days but I sure would like to have them both on tap for the Alabama / Notre Dame BCS National Championship game. What would be the best way to make sure they're ready? :mug:
 
Get the beer down to storage temp. Turn the pressure on both up to 40psi for 24 to 48 hours. Make sure there are no leaks!

After that time, turn the pressure down to serving pressure (10 psi-ish), release pressure in kegs down to serving pressure and pour a glass. If it isn't carbonated enough then repeat the steps above.

You'll get it carbed in time! :mug:
