will my beer mature at 35-45 F (1-10C)?

I've made 10 gallons of hefeweizen and i've stored it at app 20-23 C to carbonate for a week (and it has carbonated pretty well, i've opened a bottle to test carbonation and it has a huge head). If I move now this beer to colder temperatures like 35-45 F will it mature and get this specific taste that wheat bers have (like banana :)) at such low temp? because when i tasted it now it has this immature wheat beer taste. so to my question :), will it still mature if yeast "go to sleep" or will get just better.
 
Leave your beer at the 20-23C for a month. The colder the Temperature the slower it will condition. Part of conditioning is the yeast cleaning up after them selves.
