I want to make about 15 gallons of hard cider. Will it be better to use 5-3 gallon fermenters verses 1- 15 gallon fermenter? I want to use this during the Christmas New Years holiday. I want to make sure that it ages the best way possible. Any thoughts?

1 15 gallon will ferment as fast as 5 3 gallons.

Use yeast nutrient (1 tsp per gallon) if you want it "aged" in 4 months. You also might consider oak cubes and black tea or tannin to taste at kegging. Don't add massive amounts of extra fermentables if you want to drink it in the next year. Simple Common Cider will be fine by the holidays.
