Ok, I recently moved to Romania so the only hops I have are all these wild hops. But I don't know what kind they are to do a mid-range application when I add them. Normally if I know a brand of hops is generally 5-7 I shoot for 6, but I can't find anything online to help identify what exactly these are for an average range. Any ideas or knowledge of an identification chart so I can shoot for an average?

What do you mean by mid-range application... like a mid range AA% application? I've had the experience of trying to identify two varieties of local hops here in Canada... and my advice is dont try. Use them for finishing or flavor but don't bitter with them, unless you want to use 1 brew to test them out.

You can't really tell through looks, and its hard but not impossible with aroma/flavor. Genetic testing is the only way to know for sure. Make a few ounces of hot tea out of a few cones and let it steep for a few minutes. Smell it, taste it, check for spicy, fruity, floral, citrus, grassy, etc flavors and take notes. Note how bitter each sip finishes and use that to start classifying it, but you don't have much to go by other than that, in my opinnion.

Yeah as in AA. Like a Centennial runs on average of 9 to 11.5 AA from a farm I know so instead of paying for testing I approximate it at 10.25 AA. I couldn't identify them either online. Problem is that I have to use them for bittering as well because its all I have over here (moved to Romania). I will do as you suggested with the tea and try to through some educated guessing in it. These hops are going to be incredible for aroma and flavor. Spicy with citrus and a touch of floral. My wife keeps telling me to stop smelling the hops :p
