I am brewing a biere de miel next week that will eventually have a secondary fermentation in my bug infested barrel. What effect does wild fermentation have on honey? Will the unique flavors of a varietal honey be stripped, muted, or altered by the bugs? Should I save a half pound of honey to be added to the barrel, or will the sugar load stress the bugs?

Here is the high level recipe

6.5 lbs pils
1 lbs flaked grain mix
.5 lbs carapils
3 lbs honey

Mash at 152, 90 minute boil

Sterling hops for bittering (they are taking up space in my freezer)
Spalt for flavor

3711 yeast for primary fermentation
