I'm brewing an Oktoberfest for a party in September. 10 gallons with a single decoction.

That was one of the worst brew sessions I've had in a long time. Almost nine hours. I kept missing my temps and the pre-boil gravity was higher than my target SG. I've never had that happen before. I ended up dumping 2 gallons of wort before the boil and adding 2 gallons of water. I had to add another gallon of water to the fermenters! Then one of the rubber grommets I use to seal the thermowell fell into the bucket. I just left it.
