I finally did mine today. It was a partial mash with single temp infusion and the LME was hopped Euro Lager from Cooper's. I've given up on decoctions, and trying to cool wort to lager temps w/o top off water so I made a lot of changes based on the level of ease.

I suspect primary to be 1 week @ 52F, then d-rest 3-4 days or however long FG takes, then a lagering period for 2 months and I'll still have time to gas it up for September.
 
I'm planning on doing it next... My fermentation fridge is full with 10 gallons of ale, one more week and I can keg those and get a lager going. Needed to get some reserve beer in the pipeline in case one of my 4 kegs on tap gets emptied.

I have an idea that might allow me to ferment ales in a cabinet that sits above the fermentation freezer. Involves a fan, a hole in the cabinet, and a bunch of insulation. :)
 
My chest freezer arrives next Saturday. I'll do it shortly thereafter so that it gets a few months to mellow.
 
I brewed mine on May 1st. Pulled it out of the fermentation fridge for d-rest a little bit too early, so I'm wondering how that will affect the final beer. Going to give it a nice long lager at 35 degrees for about 2-3 months.
 
I did mine 2 weeks ago, I really wanted to do it in March but didn't make it. It's still slowly bubbling at 50 degrees. I sampled some when it was 50% done and didn't taste any Diacetyl so I'm not doing to do a rest.
 
Did mine in March :) Pulled off a half gallon to sample along the way, it could be ready now but PATIENCE must rule.
 
brewdate is may 28th....just didn't have the time. had to brew a porter for the club barrel so that threw my schedule off.
 
Doing mine in June, but using Biermuncher's OktoberFast ale version. It'll still have plenty of time to age (not lager), even though his purpose was to make a quicker version.
 
Mine has been lagering in the keg for two weeks now. It tasted real good going in. I've got the no touch rule in place until September 1st.
 
I did a version of Yooper's just about 2 weeks ago. I did hit the alpha rest and I have never had good luck on adding heat to a mash in my system, so instead I did a bit of decoction. I hope it will add the profile of taste and mouthfeel that the low FG might combat.
Should be ready at the end of August I think.
 
I picked up an Oktoberfest from AHS with the 20th anniversary sale a few weeks ago, it's on deck. I probably won't be able to get to it until next week with this weeks schedule.
 
Made mine last weekend. I had to go out of town on Tuesday so hopefully there was enough ice to get it through the bulk of fermentation because by now it's in a d-rest.
 
I brewed a Ayinger clone from Clone Brews on 4/24. 50 deg for 22 days and doing a diacetyl rest right now. Kegging this weekend and then back in the frig till September
 
Brewing the AG version from NB probably over the weekend :D I have plenty of other ales in the process so I'm not worried about patience ;)
 
As soon as my brew system is up and running again I am doing several brews, oktoberfest being one of them. Hopefully this or neyt weekend. Must have put the final touches on the AG recipe before that.
 
Did mine in the beginning of January. 10 gallons split into 2 five gallon batches. 5 were lagered until 1st of march and then bottle conditioned for 3 weeks. Tasted great after about 5 weeks in the bottle. The white labs Oktoberfest is slow, in case anyone doesn't know.

Second 5 gallons were lagered until April 1st and then brought back up to 65° and added Brettanomyces Claussini. Trying to see what leaving the beer at 65° inoculated with the Brettanomyces will produce in October. I may do a second lager near September 1st until Oct 1. Then carbonate.

I asked quite a few people if anyone had tried to add Brettanomyces to a lager and couldn't find many people who had done it due to Brettanomyces going dormant at lager temps. I am anxiously awaiting to see if it is good or awful.
 
Did mine at the end of April. Now its lagering in the fridge till my friends Harvest Moon Festival. Can't drink it during Oktoberfest because I'm flying to munich for the real fest this year :mug::ban:

Ever been? I can't wait.

I'll try and do my best to drink all of mine prior to the actual oktoberfest. :drunk:
 
I used WL830 their basic German Lager yeast. Never tried it with an Oktoberfest but it has been great with every other lager I have done
 
@NuclearRich No I have never been! Extremely excited. Booked a couple of brewery tours and one through the Oktoberfest fairground that guarantees a seat at the hofbraeuhaus tent. Figured its worth the money to make sure I get in that one.
