In June (I think) I made a California connoisseur white zin kit, added keisolsol, chitosan and sulfites as directed, but just never bottled it due to health problems. Now I plan to bottle within the month but was thinking of adding extra sulfites after so long, I don't want to risk 30 bottles of wine.

Sorry if it's an old question, all my search results pertained to bulk aging not bottling after any aging time....
 
Do you have any way of testing the SO2? How does it smell and taste? No off odors or off flavors?
If you're worried about the levels being low, you can always add 1/4 tsp per 5 gallons of wine.
