I have the option to purchase ...which one should I bet on ?
 
It rather depends on what you want to brew, I would have thought.
Château Abbey is sold as Château Monastique in the U. S.
If you go onto the Castle Maltings website, they give a full description of each malt and suggest styles and recipes.
