Which hops should I try?

I've been reading a little about various types of hops and want to know what more experienced brewers think. I'm going to order multiple varieties of hops to try out in the next couple all-grain batches I do.

One batch is a Red Chair NWPA clone and the other is going to be an Oktoberfest style. So tell me what types of hops you would use in these beers(please include a hop schedule) if you could use whatever type you wanted.

I am aware of these pages. If you wanted to be adventurous, which hops would you substitute for the ones recommended?

When I'm being adventurous I just order stuff I haven't had and brew with it. Sometimes I like it, sometimes not as much...
