..if you had no beer to start a culture and no labs to buy it from?

Where does it come from originally? Is there an organic source that is best for gathering something like this?
 
There are wild yeast in the air everywhere. Personally, I am not prepared to risk a batch of beer or cider or wine. Companies that open ferment using "wild" yeast generally have been in one location long enough that the "wild" yeast is the house yeast.

Just as a precaution, a yeast infection is not caused by yeast.
 
in ancient times they just did open fermentations and drank it whether it was soured or not due to contamination.

as science has progressed our wise ancestors cultivated strains that behaved well in beer, wine, mead and cider.

Wise they were... Not to mention isolated individual strands for different flavor profiles, and more consistency.
 
Interesting. I would not of thought to look in the Lambic forum, yet know it makes total sense.
