I'm making a 5 gal batch of homemade cider, I'm curshing the apples myself and wanted to know when and how much pectic enzyme to use as well as when and how much potassium metabisulphite to ues. Thanks in advance.

Normally, you add the sulfite right after pressing, in the amount of 1/4 teaspoon per 6 gallons for the powdered stuff. It's easier if you dissolve it in a little boil water first, then add it to the cider.

Pectic enzyme works best if it's not added with the sulfite, and not added with the yeast. It won't be too bad if it is, but it works best when not added with them.

So, normally you'd sulfite the must right away, wait 12 hours and add the pectic enzyme, and then wait 12 more hours and add the yeast.

A general dose for pectic enzyme is 1 teaspoon per gallon.
