My Irish ale has been in a FastFermenter with temp control at 68 for two weeks and I plan to keg and force carbonate it. I just collected the yeast and trub into the collection bottle, so is now the time to rack it to the keg for another couple weeks, or do I leave it in the FastFermenter for another couple weeks and then move to keg?

As the others said, once you hit terminal gravity, give it 2-3 days, then if you have the ability to cold crash
bring the temp. down for another 2 days, and then keg
 
You can leave it to condition for a couple weeks, but if you had a healthy yeast pitch, it's most likely done. Go ahead and keg away. For smaller beers, FG readings are more important for bottling so you don't get bombs, but even a slightly under-fermented beer will not be a problem in a keg. If it isn't quite done you can always just warm the keg up and vent the excess CO2. Easy as pie.
