I am about to brew my 2nd beer, it will be a wheat extract kit. I am planing on adding orange peel and maybe coriander. First question have any of you guys done this and what are your thoughts? Second at what point in the boil should they be added?

Thanks

I've used orange peel and coriander seed in an IPA, but not a wheat beer; not sure how well the flavors will go together. You should use the zest of a sweet orange, because bitter orange peel will come off as hoppy/bitter rather than a good orange flavor. Also be sure not to get any of the white pith under the skin of the orange in your brew as it is VERY bitter. Add them in the last 5-10 minutes of the boil and pitch it all in the primary. You could also strain out the orange peel, rack to primary and rack on top of more orange peel in the secondary as well. I wouldn't use more than 1/2 tsp of coriander and the peel of 1 small-medium orange.

Just did a Snow White wheat on Friday. It had 1oz bitter orange peel, 1oz sweet orange peel, and 1oz crack corridor seeds. It's supposed to be a semi-clone of our Alaska white up here. It's in the primary now so I don't kno how it will come out, but all 3 ingredients were added in the last 10 min of boil, and removed before chilling wort. It smelled delicious! OG was at 1.042 @ 67 degrees F.

Coriander can be over powering if used too much and will impart quite a bit of citrus note to the beer. If used IMO in the last 10 minutes of the boil. As for the orange, if you want it in the wheat just add a slice when you pour:)
