I bought the top hops pack from Yakima Valley Hops on pure impulse. Now I'm wondering what I should brew with them. So what would you brew with the following hops?

2oz each of:
Centennial
Australian Enigma
Azacca
Medusa
Idaho Gem
Cascade
South African Southern Passion
Cashmere
Sabro

1oz of: Mosaic (I used an ounce of this already in a blueberry wheat that I brewed)

I suppose it depends first of all on what beer you like.
I would google them and find their characteristics.
I looked at South African Southern Passion for a blond beer. Didn't manage to convince my friends to get me some, so it didn't happen.

Depending on your set up, I would make a small batch and check them out.
Or better, make a smash beer, only change the hop for each batch....

Big fan of pale ales and IPAs. Thinking I can probably take 2-3 of these varieties and make a pretty good pale ale
