I used 1/2 ounce of willamette hops, boiled in 2 cups water for 15 minutes. Then just poured it into my brew. I tasted it before and it was sweet and not that good. I have not tasted it yet, but I gave it a smell 24 hours after and it smelled great. Still really interested in how it'll turn out.

... a longer boil will give you more bitterness. At 15 minutes you will get a hop flavor, but not much bitterness IMHO.

Rough hop addition approximations:
- 60 minutes - bitterness
- 15 minutes - flavor
- 3 minutes - aroma (you smell it more than taste it)

I see what ya mean. Pretty common knowledge too. Just wish I woulda thought of it,,,ah well.

It's not too late to do another hop tea addition. Anyway, I get the impression that Willamette isn't a bittering hop, per say, more for flavour and aroma. Sounds like it'll compliment a British style kit, though.

Can you get hold of some nugget? If you can, I honestly think that about a 1/2 Oz of nugget, boiled in about 2 quarts of water for 1/2 an hour should see the volume of water decrease/evaporate, so that you're not watering down the brew too much, and you'll get enough bittering to compensate for the 3 lbs of DME you added to a Cooper's real ale kit.

Like I mentioned in a previous post, though, have a taste, both before and after, so you'll have an idea of how much the malty sweetness needs balancing by the hop bitterness prior to making your tea and after adding to see if it's closer to what you are expecting/hoping for.

From my own experiences with Cooper's cans & DME additions, the 3lbs of DME won't make the bittering that far off so far as English malty beers are concerned. The Cooper's ale cans reflect their English heritage. I added flavor & aroma hops, since this seems to be where the OS cans are laking, having bittering only with Pride of Ringwood hops.

Well, started drinkin these a couple days ago. The first one I drank was pretty disappointing. Very sweet and smelled/tasted like bananas. That was the only one I haven't liked so far. Nice malty taste with just enough bitter taste to it. And a real nice color too. I would have liked to see more of a head on it, but they're looking better as I get into them. Overall, not disappointed at all. Thanks everyone for your advice and help.
