I'm planning a Wit w/ 3955 but I hate to throw away yeast after only one beer. Does anyone have any suggestions for a follow up recipe for a 3955 cake?
I've not used a Wit yeast yet, so I went to the Wyeast site and all I could find was 3944 - Belgian Wit Yeast.
They suggest it for Wit, Beglian Dubble, Tripple or Spiced beers.
With the spicy phenol notes, I would guess you could do a cool wheat beer with it too. Finish with some Amarillo, Cascade or Centennial, and get a clove & citrus thing going... mmmmm....
