I have a tart cherry stout thats in the secondary, I tasted it last night, and it is very good. It has a deep red hugh to it, with a roasted malt nose to it. The taste is nice and balance with roasted malt and some tart cherry coming through.

So the question is do I add the bourbon oak chips that i've had in a jar now for a few months to it? I think that it might add an intresting twist to this beer. Or should I rack half the beer into a bottling bucket, then add the chips after? The only problem with this, is that i think it might be overpowering in half a batch. Has anyone done a reciepe like this?
