So today I just spent 4 1/2 hrs cutting, grinding, pressing, and straining my first batch of cider starting from scratch, WOW that was a lot of work. I mixed 1/2 bushel of Spy, Golden Delicious, Empire, Honeycrisp, and 1 bushel of Gala.That net me approx 7 Gallons of juice.
Right after I strained the juice to get the big bits out I added 7 Campden tablets and I'm going to let it sit till tomorrow afternoon, then I'm going to added pectic enzyme, I guess my question may be should I rack off the juice after the pectic enzyme does its thing prior to adding the yeast ( EC-1118)
