Hi all, I’m new to the forum and brewing in general so bare with me here.

I currently live in Singapore so due to lack of room and the high temp (usually around 30 C) I have only just got in to brewing as I have finally got around to making a make shift cool box which I can maintain a temp of around 20-24 using freezer blocks.

It only holds a 5 litre jug and I decided to start off by trying a simple cider I saw online from store bought juice and cider yeast (safcider). As of this morning it looks like my primary fermentation has finished so I plan to bottle it this weekend. I was planning to keep half as a dry cider and test out sugar drops to carbonate the other half. (This is all a test for me). My question is, once I’ve bottled should I:

1/ maintain the temp at around 21 C
2/ leave out at room temp 30 C
3/ put in the fridge ready for a few days and drink

Thanks in advance!

J

Welcome!

If it is a simple cider then it should be ready to drink shortly after bottling.
If you want it to settle some (clarify) then you should store it cold for an extended period of time.
If you are carbonating it, let it sit at room temp for at least 2 weeks before drinking.
Either way, it will be fine storing at room temp much like any other alcoholic beverages after bottling.

Thanks mredge,

I’ll get it in the fridge today then and see how it tastes on the weekend.

Cheers

I prefer to store any Beverage at the Temp I enjoy drinking at...Reason Why..I want it to be ready to drink when I want it without having to wait for it to chill....

If there ain't enough room for every bottle in the "cold Storage" for every Bottle I keep a few of each type Cold and Immediately replace when one is drank from Room Storage...

Ideally even in a Room Storage area you want to keep it as cool as possible. Warmer Temps lead to degrading of the finished products.

Bottle carbonation requires at least a week at fermentation temperature (or higher)... so for the bottles you want to carbonate you need to leave them at 21C-30C for 1-4 weeks.

30C is a bit high for long-term storage, but should be fine if you plan to drink it within a month or so. You may begin to lose flavor and taste oxidation.

John - thanks for the tips, I designed the cool box so that it can fit my 5 L jug during fermentation and also all bottles once bottled so I’ll make sure all the drinks are either in there or the fridge.

Rph - I was thinking 30 would be too high but unfortunately the heat gets everywhere in our flat so I guess the cool box and the fridge are the best two options. Thanks
