What should I try to keep my ambient temperature at?

I have a chest freezer that I put a temperature regulator on. I understand that the actual brew is warmer than the ambient temps so I'm wondering what is a good general rule?

is 61-62 degrees too cold?
 
I keep mine at 64. That way the wort usually stays at or below 70 during active fermentation but it's not too cold for conditioning.
 
It really depends on the yeast. Most ale yeasts are happy in the low/mid 60s.

Things like hefeweizen yeast and saison like to be warmer, things like Scottish ale and Kolsch yeast like to be cooler.
 
yeah, if you go to the wyeast or whitelabs website they will usually say what the ideal temp range is for the particular strain you are using.. i've found that the temp ranges they give are for good reason.. i've had a couple that were just a couple degrees lower than the ideal and they never really fermented well until i moved them out of my basement
 
Your temp probe should be fixed to the side of the vessel with some insulation or you should be using a thermo well. If you do either of these things you can set the temp to exactly where you want the beer to ferment and the regulator will keep it there. This also minimizes the cycling of the unit to maintain the temp.

I bungee mine to the side of the bucket with a wad of insulation and it keeps my vessel at +/- 1 degree from setting. This way you really can set and forget and know your beer is where it needs to be.

yeah i'm actually having some trouble with my regulator not holding the temperature.. not sure what the problem is.. If i crank it down it fires up and gets it real cold then come back later and it's gone up 10 degrees...

I'm using the johnson a19.. Maybe if I attach it it will work better? Right now it's just hanging in the air.. still strange
 
How are the jumpers positioned? I think you'd want it set to cool/cut-in.

Definitely attach it to the vessel with insulation and it will/should work properly!
