Your temp probe should be fixed to the side of the vessel with some insulation or you should be using a thermo well. If you do either of these things you can set the temp to exactly where you want the beer to ferment and the regulator will keep it there. This also minimizes the cycling of the unit to maintain the temp.
I bungee mine to the side of the bucket with a wad of insulation and it keeps my vessel at +/- 1 degree from setting. This way you really can set and forget and know your beer is where it needs to be.
