I added step 1: Kieselson, then forgot to add the step 2: Chitosan 1-48 hours later. It is now 6 days later. Do I add it? Will it still do the job or will it harm my wine?
Thank you very much! I'll go ahead and add 2nd step right now, and thanks also for the reminder about adding the stabilizer!Kieselol is negatively charged , and so binds with any positively charged suspended particles, which then sink.
While Chitosan is + charged, and binds with - charged particles.
If that's true, then adding the second much later, won't matter. While added too soon, the finings could just bind with each other.
I've forgotten the 2nd addition a couple of times, by a week or two. But the wines still cleared.
More important for clearing, is the stabilising (with sorbate & meta bisulphite) then degassing to remove CO2, before any fining.
I use a drill paddle degasser, but for 1gal batches vigerous shaking can work.
I forgot to put it in a wine of mine for a few days and it still worked.
I use clear fermenters and I was able to see the extra polish that it achieved.
