i have got a extract kit has a gift the box says american bock but the list of ingredients
2 cans dark unhopped extract
6 oz chocolate malt
6 oz crystal malt
6 oz pale malt
1 oz hallertau pellets
1oz tettnang pellets
muntons ale yeast
priming sugar - 5oz
sounds more like it will make a stout or porter any suggestions

A bock of course.......

More than likely the extract blend is meant to emphasize the malty nature of them. I don't think you really can do anything else with it.

Without lager yeast, it won't be a true bock. The ale yeast provided is likely a very clean strain, limiting you to a clean, dark ale. With different yeast, you could alter the flavor profile to be a little more Belgian (a lot of spicy/fruity esters) or English (mildly fruity esters). However, your ingredients don't lend themselves to a lot of creativity.

Definitely a Bock, except for the yeast. Muntons (unless it's the Gold yeast) will finish on the high side. Keep the temperature around 65F if you can.

ok first after brewing
my gravity was at 1040 the booklet from the truebrew was 1050- 1052
next i changed what it said to do to the grains they wanted to bring 1-1.5 gal. to a boil then steep the grains for 20 to 30 mins
what i did was steeped the grains for 25 mins at 150-154 then rinsed with clean water at 150-156 .5 gal then brought to a boil added hops boiled 45mins then added second hops 1.5min from end cooled to 62 then took my gravity after transfering to my fermenter topped up to 5 gals iwaited to take the gravity until i added the last 2.5 3 gals. of water. it was black/mud color. anything?

There's a good chance, unless you really stirred up the wort, that you were measuring the SG of a lighter portion from the top. Sugars like to sink.

i just got a 5 gallon cooler to use have mash tun
going to try some ag 3 gall batches anyone recommand a starter recipe

HBT's recipe section has a wide assortment. Almost any recipe can easily scale to your batch size. Pick a style of beer you like and look at the threads with lots of posts (especially ones from EdWort, BierMuncher, YooperBrew, and Orfy, among others). Long threads tend to mean well-proven recipes with lots of HBT experience to draw upon. For your first couple batches, I'd stick with something low-gravity -- low gravity beers mature sooner, so you can verify your process (drink beer!:D) sooner.

Naughty homebrewer, using dark LME. Use the light malt extract and build the grain profile yourself. It's more rewarding.

ill have to try that

also how do you regulate the temp of the bucket frementors
i came home from work and the temp was up around 70 i sat the bucket in a dish bucket for about an hour and brought the temp down to 64-66 then 2-3 hours after it was creeping up to 66-68 degrees

The 7 gallon buckets I got from AHS fit perfectly into my 10 gallon Rubbermaid coolers.

Never forget that fermentation is exothermic; fermenting beer can warm itself! You may want to implement a semi-automated temp control system like this:

944play thats what i did kinda and was a short fix but that would be a good reason to invest in the larger cooler for a mash tun
