Citra saison (all grain)

Looking for a nice and dry saison with and balance between the yeast and the hop flavors.

Grains

8lbs german pils
1lb Munich
1lb Wheat malt

Liquor to grist ratio : 1,5qt/lb

(dont want a thinner mash because my mash tun is only 5 gal and i want to add water to attain 158deg prior to sparging)

60min at 148 deg Farenheit
30 min at 158 deg farenheit

Hops:

Boil 60min

O.75oz Citra @ 60min
0.50oz fuggles @ 15min (earthy flavors)

0.50oz fuggles @ flameout

Dry hop with 2 oz of Citra

Yeast : WLP566 (belgian saison II)

What do you guys think?

Looks good. What temp are you thinking about fermenting at? I always find that to be an interesting question with any Belgian-esque beer.
