Do you Brewers ever skim off your foam? I’ve always did it just because I usually do it when cooking soups!

It does taste quite delicious! Super sweat, yet creamy - sort of like a sweet espresso!
 
I stare at it until it breaks down and goes away on its own. I know that if I get a good hot break, and a good cold break, most of what is causing that foam will be in the pile of schmutz at the bottom of the kettle after its whirlpooled. I also know that foam will carry dextrins and other things that I don't want to remove from my beer. I also will want some residual proteins to bind with any polyphenols during the cold break and cold crashing, to help avoid haze and cloudiness later. Unless i'm brewing something that is supposed to be cloudy, then I care even less :)
