Did a new Chicken Tetrazzini recipe last night with egg noodles. Will definitely do this one again and again!! Probably should have waited till the parm melted before taking the picture :)

Fried chicken using that one recipe which is supposed to be the KFC spices that a reporter took a photo of. Wasn't bad. Tried using a brine for the first round. I'll use buttermilk/egg for tomorrow and soak the chicken in that. Of course, I don't have a pressure fryer and don't plan on buying one. Instead, I use boneless and make sure the pieces aren't too thick.
Was curious since I was unaware of the Chicago Tribune article with the herbs and spices. In a subsequent article from their test kitchen they played with the recipes. Based on that I would go with the buttermilk/egg soak instead of a brine. But I am wondering, did you add any MSG or not? CT Test Kitchen said that is what it took to bring it in line with the KFC they bought at the time of the test kitchen article.

No MSG on that first batch.
Once I saw the lay of the land after I had floured/spiced the chicken, I knew It wasn't going to look right but I was proceeding on what an article said about how the reporter watched KFC employees brine and then go straight to the flouring/spicing.
Though the chicken looked great, it wasn't right. That prompted me to get buttermilk this afternoon. Also, I stood in front of the spices for ten minutes trying to find MSG or a version of it--no luck on that.
So, round two tonight. I'll post with results.
 
That was my number two after MSG. I think Kroger took a big hit from the holiday and I wasn't about to go meandering about town. If the flavor is close after this experiment, I will search out some MSG. I am like a dog with a bone if I'm close. I did it with Detroit style pizza and I'll do it with this. As I mentioned earlier, being minus a safe pressure fryer will always be a missing "ingredient."
In any case, I'm soaking the chicken in a cup of buttermilk and an egg for 30 minutes and it just finished as I'm writing this. I'm ramping up the deep fryer. The recipe says let the floured chicken rest for 20-30 minutes and I shall. I'm a half hour away from dropping them in the grease. I'm a little excited.
 
Homemade chilli. Even used some dried red beans. One of the best tasting batches ive made yet. Nice and thick with only a little beans.

That looks fantastic. Rancho Gordo Domingo Rojo? Will you share the recipe please? And did you cook or soak the beans separately or just cook them in the chilli? You've flung a craving on me! lol
 
Cooked the beans separately. Used some of the bean water in the chili when i added the beans. 365 organic brand i think.

Main seasons are Williams Original Chili Seasoning, garlic powder, cumin powder and Kirkland No Salt Seasoning. 3lbs 85% lean ground beef and 2 cups chopped yellow onion. Can of Ro-tel tomatoes and green chiles (No salt added). Its pretty lean too so its needed a little avocado oil while browning the meat and onions.

Total sodium is super low so it does need salt added. I like the Williams because it has no salt added. I can adjust salt and "spice" separately.
 
Accent is 100% MSG. Nearly all of them have been named 'flavor enhancer' unless you have an asian isle.

Luckily there is no shortage of SE Asian stores in my area. I can buy a 5 pound bag of MSG for just under $8. Incredibly cheaper than buying the little bottles/containers in the American stores.
 
Nongshim Kimchi Ramen bowl
A few ounces of pork neck bone meat and a few ounces of really old kimchi

Get another microwave safe bowl about 1" larger OD
Dump the seasoning pack in then the contents of the Nongshim bowl (Dried noodles and dried flakes)
Place the pork and kimchi around the outer edge. This is part of the reason you want the larger bowl
Fill the Nongshim bowl with hot water. It will be a little more now without noodle block in it
Poor that in your larger bowl
Microwave for 3.5min Stir about half way through
Let set one minute and enjoy :D
