Comfort food.... soba noodles with sliced smoked duck breast.


I would like that post 800 times if I could. I'd also lick the screen if I thought it would taste ANYTHING as good as that looks! :ban:

We had panseared swordfish steaks, ovenroasted delicata squash, sprouted brown rice/quinoa mix, and homemade tartar sauce, heavy on the capers. My stupid camera isn't working well - tried to take pictures of the lamb shanks I made the other night and they were very out of focus. Guess I need a new camera!
 
Tempted, "Sprouted brown rice?" Is that like malted barley, only rice? Sweet? Hull on? How do you cook it? What do you do with it? Where do you get it? I'm intrigued enough to use the word intrigued.

PTN, it's a product by a company called TruRoots. I bought it either at Costco or Grocery Outlet, can't remember which, but Amazon also has it, and probably other on-line sources.

You add 1 cup of the rice/quinoa mix to 1.75 cups boiling water (to which I also add a teaspoon of chicken stock paste and a tablespoon of butter-flavored coconut oil, or bacon fat, or olive oil, or whatever is handy) and then cook at a low simmer for 25 minutes, stir and let stand 10 more minutes. It's got a nice nutty taste to it that we really like.

Here is a picture of what the package looks like - it's actually brown, red, and wild rice, plus quinoa:

Honey / sesame / bourbon / teriyaki chicken with veggies (broccoli, carrots & celery).
I also added a bit of coconut milk to both the veggies & chicken, more for the veggies. A bit of fresh ginger & garlic for both, some basil & thyme for the veggies & a splash of green chili (jalapeno) hot sauce in the chicken.
I thought it was tasty. :)

So my playoff cassoulet just went into the oven. Here is how I put it together.

White northern beans soaked then simmered in chicken stock with a dollop of duck fat and herbs till almost done. Done yesterday.

Pork belly and pork skin simmered in duck fat for an hour. It took some exploring to find the pork skin but I got lucky. I cut it into 2"x2" squares.

Thigh bones pulled out of the duck legs.
 
All of that was done yesterday.

Tonight I chopped the pork skin into a tiny dice and put that on the bottom of the casserole.

A layer of beans and the pork belly.

Cut up turnip, more beans and 4 duck legs.

Then covered with the gelatinized stock from the beans and int the oven.

tonight was grilled cheese sandwiches on sourdough and homemade creamy tomato soup. I've been craving that stuff lately and luckily KOTC is now on board - he wasn't all that sure he wanted grilled cheese and/or tomato soup the first time I suggested it. He should know better than to question the culinary skills of his lovely bride! :D
