I was fortunate enough to source this beautiful Berkshire Pork belly from my butcher a few weeks ago. I cured it, soaked it, air dried it, and now I'm smoking it! Bacon!

Smithfield portabello mushroom pork loin. I buy them on sale when I see them yellow tagged. Cook to 140° then wrapped in foil. Cooked massive amount of potatoes in pressure cooker in 15 min to go with. They could be mashed with a plastic spork. You could wring that loin like a dunked pool towel.

I never got around to posting this last night. Got home, had not been to the store, but I did have a can of San Marzano tomatoes, most of an onion and a little bell pepper left from the other night, parsley and basil growing in the yard, and a box whole grain pasta, so I made some spaghetti sauce. It turned out very very nice! And my wife just loved it :)

More from the lazy cook over here. I think I'll be getting a sandwich maker for my birthday. Be on the lookout for anything and everything put in that thing. Still using my breakfast sandwich maker but now just cooking one egg on each level with cheese on it to throw on buns for breakfast sandwiches. Last night made meatballs with cornmeal instead of breadcrumbs cause that's what we had. Seared them in canola oil, then added diced garden tomato and half jar of good organic pasta sauce. Simmered until it was super thick and served on rice. I think I made 6 cooked quarts of rice. 10 minutes perfect every time in pressure cooker. Added salt butter and boulion. It makes me think when I show a picture of it it just looks like a bowl of rice. But in reality it is a super tasty bowl of rice that i had to stop my kids shoving in their mouth with both hands. The meatballs and sauce on top of that Rice reminded me of an Indian dish. Would like to make some chicken tikka korma soon.
 
Daughter and her husband are coming over tonight for dinner. I'm doing steaks, baked potatoes, and Pascal Manale's Barbecue Shrimp :)

It's supposed to get to 99 degrees here again today, but on the plus side the AC guys should have my air fixed before dinner!! lol
 
Low-carb Cherry Danish. No sugar, no flour. Homemade cherry filling. Cream cheese icing.


Can't. Believe I'm asking, but do you care to share the low carb Danish recipe? I've cut out enough carbs and sugar that if I want it, I usually have it (weekends), but I'd give that a try.

Very happy to share. It does use a couple "special" ingredients but I've been low carbing many years and keep these on hand anyway. Everyone loves these Danish!

Temptd's Cherry Danish

Makes 12 - they freeze well too.

Dry ingredients

1 cup blanched almond flour (I prefer the Honeville Grain brand)
1 tablespoon plus 1 teaspoon vital wheat gluten
1/2 cup oat fiber
2/3 cup Designer Whey plain or vanilla protein powder
2 teaspoons baking powder
1/2 teaspoon xanthan gum OR
1/2 teaspoon glucomannan powder (optional but glucomannan or xanthan do help with texture/moisture retention)
1/2 cup sugar substitute (granular Splenda, or whatever stevia you like, or erythritol, or a combo)
1 cup shredded mozzarella cheese (yes, cheese, really!)

Wet Ingredients
4 eggs
1/4 cup plus 2 tablespoons light oil - I use rice bran oil or grapeseed oil
1/4 cup sugarfree Torani or DaVinci vanilla syrup
1 teaspoon vanilla extract
1/4 cup water

Topping - 1 can no sugar added cherry pie filling (Lucky Leaf is good, Comstock is OK, have used Walmart’s Good Value no sugar added apple filling too – even SF jam will work fine)

Icing
4 oz. softened cream cheese
Sweetener to taste
1/2 teaspoon vanilla extract
Enough heavy cream to thin to a squeezable consistency

Directions:
Preheat oven to 350*. Spray or grease 12 muffin top pan wells.

Stir all dry ingredients except cheese together in a medium bowl; once well-combined, stir in the cheese.

Mix all wet ingredients together in a 2 cup glass measure til well blended. Mix dry and wet ingredients together thoroughly, scraping sides and bottom of bowl, and let sit for 5 minutes. Divide evenly into 12 muffin top pan wells. Spread to fill the pan wells. Top each with about a heaping teaspoon of the cherry pie filling - I leave some of the gloppy stuff behind and try to concentrate on getting 3 or 4 cherries on each Danish.

Bake at 350* for about 15 minutes, til the batter is set and turning golden brown. Let cool in the pan 10 minutes, then carefully remove to a rack to finish cooling. I find a plastic spatula helps get them out of the pans - loosen around the edges first, then run spatula gently under the Danish.

To ice - beat together the softened cream cheese, sweetener, vanilla, and enough cream to make an icing consistency. Spoon into a sandwich baggie, snip off a TINY corner, twist the icing down into the bottom of the baggie and pipe onto the Danish.
 
Plans fell through with my daughter and son-in-law for tonight since my air conditioner guys were here so late so I could not get to the store. Shrimp were already thawed though so I'm just grilling them. Marinade is garlic, lime juice, paprika, ancho chili powder, olive oil, salt and pepper. Ready to go on the grill.
