I have a feeling it will be consumed between now and then whilst preparing morsels of joy for the festivities.

Then again I have a fair amount of beer too...
 
Made Baklava last night. Found some phillo dough in the freezer and off I went!

I only had walnuts and pecans, but I made it work. My daughter helped butter the layers and it went pretty quick. Got a late start though and by 10:00 I was wishing I'd put it off for another day. But this is the last day of work before the Holiday break so I powered through (By taking a nap and telling my wife to wake me up if the sauce boiled over or it hit 11:00...)

Got a rave review so far today. I will try to remember to take a picture when I get home. Still plenty left for the party tomorrow.

I used less sauce to coat it with and it worked out nicely. Last time they were swimming in liquid sugar. I have enough sauce left to make more tonight.

Hey I was going to ask you for a good sourdough recipe. I don't know where my recipe went. I want to try making one that is not as chewy on the outside. My wife doesn't care for "artisan" bread because it's tough and crusty.

The Christmas prep continues.
This is my Jambonneau (little hams). I cure fresh pork shanks for 8 days then apple wood smoke them for 6 hours. On Christmas day I'll slather on a ham glaze and reheat them over an open fire. :mug:
 
Starting some country style pork ribs marinating in a some stuff similar to what my sister does to chicken for her husband, who is from Trinidad. Using sour oranges that I brought back from Florida, juice and zest. I'm going to put it in the crock pot tomorrow morning and let it go while we travel about from relative to relative. I'll serve it with rice and black beans tomorrow night.

Tried something different tonite... did al pastor marinated chicken thighs and grilled them low for about 30-40 minutes til crispy. Going to be served with mashed potato and grilled yellow squash.

I found the recipe here.. http://www.mexconnect.com/articles/4209-chicken-wings-in-chile-pineapple-marinade-alitas-al-pastor also added some onion and cilantro to the blender to floral it up a bit.

I happened to have some frozen puree of various chilis laying around but powder could probably sub in a pinch, you'll definitely want the chipotle in adobo and achiote paste though.
 
I did a year end soup/stew to clean out the freezer - all the frozen veggie scraps went in to make the stock, strained it, then added chicken breast, quarters, oxtail, and then some bone-in country ribs.

The only downside is I did it in the pressure cooker (22 qt) without deboning the birds, so I ended up eating a few soft bones by accident (yech). Soup was great with some thin sliced Brussel sprouts, kale, onion, and some brown rice noodles. Fed me for about 5 days!
 
Well, remembered everything but the charcoal dang it! Turkey going in the oven. Wife likes it stuffed anyway. One of these days I'll have less cleaning to do so I can prep my pit stuff earlier. Dang, & I had hickory to put on the coals too, along with some cottonwood.
