That is one thing I miss on keto - nachos! I LOVE them. I've tried it on pork rinds and it's OK but not the same taste. Taco salad is delicious and I love it but different from my beloved nachos. Those look reallllllly gooooood @TwistedGray!

Usually do pork nachos, so this was a nice change of pace :) but yeah, yum :)

Guinness pie, didn’t wait for the mash to brown and my torch was low on gas.
 
Very nice indeed! I love shepherds pie, but have never made it. Seems like everytime I lean that way I end up making Irish stew with colcannon.
So, same thing really, you just have one more dish to wash! BTW love colcannon. And bubble and squeak, its English cousin.
 
Son and I made stir fry last night. I love cooking with the little guy. Pecan smoked pork, little bacon, little Canadian bacon, celery, carrots, onion. Haha, this chopper worked. Anyone know what it is, my mom gave it to me at christmas. Haha, and my daughters 100 day project. She wanted a 98 mm base with two on top. Seemed weird, but turned out the two on top could have been doing anything. Skiing, on an island, watching tv, etc...we made this cute little scene, but I was impressed how this simple idea could have unfolded into any scene.View attachment 667214View attachment 667215View attachment 667216

Nice job and great activity to do with the little ones. The chopper you're asking about is called An Onion Chopper and it's made by a company in Seattle/Kent WA called Progressive Intl. My wife happens to work there and it really is an awesome tool that every kitchen should have. (Some of us may remember the collapsing stainless steel steamers baskets from back in the 70's, that's one of the first big products they came up with).
 

Love albondigas soup! Learned about it on a DDD episode that went to Pepe & Mito's in Deep Ellum in Dallas, then we went to Pepe & Mito's a tried it and it was just amazing. So since I had the DDD episode recorded, I recreated the soup from that and got pretty close. Peppe & Mito's does flat albondigas to order on a flat top griddle that end up looking like little hamburger patties, then serve those in the soup and it's amazing. I have made it both that way and with normal albondigas as you did and love them all.

Care to share your recipe? I'm always game to try a new one!
