What did I cook this weekend.....

Made an early Thanksgiving Dinner for my mom while she was in town. Main course was duck roulade, creamed sweet white corn, and morel mushroom sauce. We also had Sacher torte which was a trial run for another Thanksgiving I am attending (Second one came out much better). And the bread was a slight sourdough sweetened a bit with honey and had roasted nuts and pumpkin seed.

While the pumpkin pie was in the oven this am, so was this onion, cheese and bacon quiche. Happy Thanksgiving, if you don’t celebrate it have a happy anyway. :j

Sheet pan?

Two-third sheet pan was perfect.

Ended up doing a dry salt brine and the turkey was moist and delicious.

My knife is dull so the breast skin got jacked for serving and plating skills are whack but...

My wife does all the work...she only cooks a few dozen times a year, and this is one of those times.

Whipped cream is whiskey cream from wife...starting with pumpkin pie, still two hours out on the turkey.

Bought a fresh turkey breast this year that wasn’t overly pre salted. Might make me change my mind about turkey. Was delicious. The gravy was dynamite too but it didn’t even need it.

smoked a pair of turkeys on Wed for Tgiving dinner yesterday, and today I'm using those carcasses to make a pot of smoked turkey soup

Plus I put oodles of post #16536 on it. Don't remember if I said, but mayo is one of my favorite foods.

Sous vide brisket. 24 hrs @ 155F, then a couple of hours on the smoker. Best one I've done - I expected disaster
