It has been 5 months in the fermenter. Not quite as sour as I'd like, but still pretty good. Gose isn't supposed to be overly sour anyways. If I did it again, I'd probably try the sour mash method.

Why so long?

Bottling my second gose tomorrow (~6 weeks in). I soured the wort with a grain lacto starter (quite possible more than just lacto), then pitched US-05 a few days in.

Last check wasn't really sour, but the first one didn't get sour until it spent some time in the bottle. Hoping for similar results this time around.

I got lazy. And was kind of wondering if it would sour more if it sat longer. Maybe it'll sour more in the bottle, but even as it is now, the sour level is good for the style.

jasmine tea I got from the Asian store and some Taro Mochi from the same place. oh, mochi! where have you been hiding all my life? I also picked up some canned (they were all out of all fresh fruit) sapota to add to a beer.

Mochi is one food that I just don't get. I've tried it several times and always wonder why I thought it would be different that time.

Finally trying this side by side. Real one was probably aged too long to have a reasonable test. real one has way more malt and not as dry. At this point i actually prefer mine as the other is just too malty. Probably peaked awhile ago though. Both good in my book!

If yours is even comperable, you done real good. I think that has won some serious bling in international comps.

I remember the original being better the first bottle I had. I think I let it sit too long; all malt and no esters/phenols. The one I brewed just scored a 40 (advanced to mini-BOS but didnt place) at the Minnesota mashout though so as far as competition scores go, its the best beer (to style at least) Ive brewed. Certainly one of my favorites.

Nice. My only decent comp score was a fairly simple beer (blonde) that got a 36 in a statewide comp.
