That's the only thing hindering my exploration into the wonderful world of Brett. I guess I should just dive in, maybe putting everything in c&c or heavy capped 375's (like 7venth Sun or Crooked Srave) would calm my nerves a bit. Great beer, by the way.
I added us05 to carb it. First time i didnt add any it did not carb very much. I now do a c&c 375 or 750 for some of my brett/ sours. So far so good. I let them sit a long time to insure they are done fermenting.
