Belgians are easy because the sugar is predictable, in most cases, though the yeast is sometimes not. That's what I found out when the M-41 surpassed the usual FG by a lot (totally an accident). The beer turned out well like a Westmalle but not what I was shooting for.

I think it’s gonna be a damn good beer that should age well. If there’s no carbonation after 6 months I’ll pop the tops and add a little CBC yeast.

HB BA RIS. Yah, it's only 10AM, but I'm bored!

EDIT: I aged this on cacao nibs, vanilla, and cinnamon, then aged in a bourbon cask. Very impressed, very drinkable!
According to my notes, 10.6%, but not hot.
