Heck yeah to the ABV. Sad face for the lack of carbonation. Unfortunately, you've entered into the realm above my knowledge. Belgians are easy because the sugar is predictable, in most cases, though the yeast is sometimes not. That's what I found out when the M-41 surpassed the usual FG by a lot (totally an accident). The beer turned out well like a Westmalle but not what I was shooting for.

I think it’s gonna be a damn good beer that should age well. If there’s no carbonation after 6 months I’ll pop the tops and add a little CBC yeast.
