I'm brewing up my Pine Barrens Black Lager today. I'm excited because it's based on one of my favorite beers, Saranac Black Forest. I'm also excited because it's my first lager! :ban:
 
Type: All Grain
Size: ~1 gallon

Grain:
3lbs Briess Rye
2lb Maris Otter

Spices/Additives:
2 tbsp. black peppercorns, 1 cracked
1 tsp. Irish Moss

Hops:
.5 oz New Zealand Super Alpha 60min
.5 oz New Zealand Super Alpha 20 min
1 oz Amarillo 5 min

Yeast:
Wyeast #1084 - Irish Ale

Ferment for as long as necessary, bottle condition with pure maple syrup, which I always have on hand, because I like pancakes; taste at three weeks. If this is as bad as I imagine it will be, I'll have to drink all of it, to preserve my dignity. I suspect that will be the case. If, however, it turns out to be delicious, then I will adapt this recipe for five gallons.
 
I just finished an dark India Brown Ale, with a malty base and tons of late addition Nelson, Galaxy, Chinook and Summit. Should be interesting!
 
A lager, I put a Czech pils in last weekend so I figure if I'm gonna monopolize ferm space I need another bottom fermenter in. I brew so out of season, WTH?
