I bought a six pack of Sam Adams Octoberfest today. Cracked the first bottle and I taste this astringency flavor Ive had in a few of my home brews. It is definitely a flavor i do not prefer but still drinkable. Id say its an astringent almost metallic flavor. Ive been trying to pinpoint this for quit some time. At first I thought it was an infection but ruled that out. Next I went to chlorine and water quality- don't think that is the problem. I am now thinking it might be a product of fermentation temperatures or mash ph..??
Possibly but i doubt it, could be a certain hop as well?
Any suggestions? I kind of taste it in Newcastle Brown ale as well. The homebrewed beer Ive tasted it in was Northern brewers white house ale.
