What ale yeast should I use

Here is what I plan on brewing

2 lb light dry extract
3.3 amber liquid extract
1 lb rice extract or dry
1lb crystal malt l60
1 oz select spalt or saaz (60 min)
1oz saaz (15 min)
1 oz Hallertauer (5 min)

Any of the big three, SO5, S04, or Notty will get the job done well IMO. Personal preference or style target would dictate.

05 and Nottingham will attenuate a bit more than the 04.

Try all three and pick a favorite.

I think S05 is becoming one of my new favorites. But any of the three listed above are good.

I've done about 4 batches this year with S05 and liked the way it worked off and fell out.

I am looking for a beer something like XX style beer

Dos Equis (I assume that's what you mean) is a Vienna Lager, so if you are shooting for that you'll need a lager yeast and a good handle on temperature control. White Labs has WLP940 Mexican Lager, a yeast that works quite well for Dos Equis/Negra Modelo style beers. I've also had good luck with Wyeast 2124 Bohemian Lager in my Vienna lagers. If you don't have the ability to ferment in the 50° range, you might consider a Kolsch yeast, which has lager-like characteristics, or Wyeast 2112 or White Labs WLP810. Both are California Common lager yeasts, meaning they can ferment up to the mid-60°s, a very handy trait for making lagers without a temperature-controlled fermentation setup.
