If you're ever in San Diego I recommend White Labs Tasting Room. You can get flights of the same beer but with different yeast strains. Kind of hard to apply it to mead but i think its worth the trip just to see what yeasts are capable of.

I went there a couple years ago. It's a great way to taste for yourself how different yeasts impact the flavor.
