I purchased a morebeer "American Lite" kit, which is supposed to mimic a bud light kinda beer. but i thought, what the heck, since we didn't actually want to make bud light, lets do something crazy. so my buddy who i brew with went to the farmers market to pick up some neat things to toss in it. and he came back with Orange Blossom honey, Basil, Meyer Lemons, and Radishes.

yeah, that's kinda nuts. but i did it anyways. so i added 6 oz orange blossom honey to the start of the boil. and added 1/2 oz basil and the zest of 4 meyer lemons to the last 5 minutes of the boil.

all was cool.

then we decided (don't judge us, we're crazy), to boil the radishes a little bit, and the juice and zest of 4 more meyer lemons, let it cool, and added it to secondary.

all was cool until the radishes took place. it was pretty weird and tasty, but post radish addition, it got really....savory.

its been sitting in secondary now for 3 weeks, and i'm not sure what to do with it. any suggestions to help get the savoriness down, maybe add some sweetness or more citrus? i'm just looking for ideas to take this mad science even further.

thanks

haha...i dunno if i'll be doing many basil beers again. it was a shot in the dark. but i assumed that would be the only answer. mellowing with time. thanks.

I've heard good things about basil in beer. Expecially with lime or kaffir lime leaves. Should be sorta like Thai food. ;)

You could always dry hop. The extra hop aroma might help to mask some of those flavors. Maybe 2 oz of Cascade or something like that.

Sorry to be off topic, but if you didn't want to brew a "budlight" beer, why'd you buy a "budlight" beer kit?

Back on topic. I'm with Bryce, get some nice dry hop going

follow up:

dry hopped with 1oz. saaz for a week (just what i had extra laying around)

came out beautiful! highly recommend trying a basil beer, y'all.
