Well, brew number 5 for me and another "first."

I just pitched WLP008 into a 1.060 OG wort.
The wort was made last night and quickly dropped to 50 or so degrees. I warmed it up briefly this afternoon but it was still on the cool side around 55-58.

I had my starter in my fridge for about a week and was approximately 200 billion little guys.

I expected a large lag time due to the cooler temps but about 30 or so minutes in and this bad boy starts chuggin away.

The wort smelled amazing this am and my middle name should be Star San so I don't think it caught a bug.

The only thing I can think of is that i cleared out some of the starter beer last night from my growler so the yeast would be ready to pitch. Maybe I riled up the yeasts with some O2 last night? But, with that being said, the yeast went back in the fridge until about an hour before pitching today.

Do I have super yeast?

Am I an idiot?

Can it be both?

Cheers!

So you are saying that within 30 minutes of pitching the yeast you are seeing activity? You mean actual, steady bubbles in the airlock? I have been brewing for over well over 25 years and used the East Coast Ale Yeast many times and have never heard of such a thing.

Further update: It turns out I'm an idiot. The fermentation I was seeing has stopped. Somehow I think my fermenter was a little pressurized. Not sure how or why but the activity in the airlock stopped after about 5 minutes!
