So I have 1 brew kettle that has gotten me along for a couple of years now. I want to add a weldless spigot to it. My question is can once I make the conversion can I still boil in it? I know the rubber gaskets are at least good enough for mash temps, but would boiling be too hot for them?

Weldless is fine for a boil kettle. Most of them come with a silicone gasket that's rated for high temps.
