Have a recipe for a Harpoon UFO clone. the recipe calls for the WB-06 yeast. I have used this once for a wheat dopplebock and when the description says 'subtle ester and phenol flavor notes typical of wheat beers' this is a significant understatement. it had a bad phenol charactor. the recipe calls for this but harpoon ufo has little to no phenol from my memory of drinking it 2 yrs ago. any suggestions for a closer replacement or is this an appropriate yeast and my memory is off? I was actually thinking US-05 would ferment close but again maybe I am off. any suggestions? as per other posts I use mainly dry but am not opposed to ordering in liquid to get this one right. mainly making it for my wife who loved this beer when we were in Boston.
 
Bah I have not had good luck with WB-06. I used it once in a Weizenbock and it turned out OK, but in a Dunkelweizen I did it sucked balls. Go with liquid.

Or, use T-58. Its supposed to be a Belgian dry yeast, but it gives some good banana flavors when fermented above the mid 60's.
 
found this article http://trappistpunks.com/?p=60 for harpoon which indicates it is an ale yeast with some mild esters etc so will definitely bag the WB-06. will continue to research and any other suggestions will be appreciated. I have several others in line prior to brewing this, so may be a few weeks
 
If you want to go dry, use Danstar Munich. Otherwise, probably Wyeast 3068 or something similar.
 
I've brewed a couple hefe's with WB-06 and have been satisfied.
I prefer it over WLP300.
My fermentation temperatures are always in the low to mid 60's.

Yay! I have a hefe 1 week before bottling now, used WB-06 and fermented in the low 60's. Was getting a bit worried after all the hate-mail regarding this yeast :)
