Hi Everyone. Just wanted to share my success in producing my very first apple cider. Been brewing other things that the wife didn't particularly like. She's a wine fan. Simple recipe. Apple juice, 1/2 cup brown sugar and champagne yeast. Easy peasy. Two weeks in the primary. Bubbled like crazy for about 4 days and then settled right down. After 2 weeks I racked it off and put into a secondary and let it work another 2 weeks. Poured it into large Mason jars and placed into the fridge for a few days. Poured a sample into a wine glass and it was wonderful. Dry with lots of apple "notes". Wife seems to like it a lot. Gotta start some more now. Good luck everyone. Be fearless! Love the yeast. This next batch I'll use more 100% juice with brown sugar, yeast nutrient and some pectin enzyme to clarify the end results a bit. The woman of the house sez it tastes like a pinot grigio! Whoo Hoo ... whatever that is? :rockin:
